Who doesn't love some homemade banana-nut bread? This morning I woke up and was in the mood for something yummy yet healthy. I had some leftover bananas that I wanted to use before they would go bad. I decided on a delicious recipe: Banana-nut bread, or in this case muffins. To change it up a bit I used coconut flour instead of regular flour. To ensure a wholesome treat, I only used organic/natural ingredients. Pair it with a nice cup of tea and it is the perfect breakfast or afternoon snack. The recipe is as follows:
Ingredients:
6 organic eggs
1 tbsp raw honey
1 tsp vanilla extract
1/3 cup of melted coconut oil (cooled)
1/3 cup coconut flour
1/2 tsp baking soda
1/2 tsp unrefined sea salt
2 ripe organic bananas mashed
1 cup of chopped walnuts or pecans (I used walnuts)
Directions:
Preheat oven to 350 F
In a large bowl combine eggs, honey, vanilla, and coconut oil and mix well
In a small bowl combine flour, baking soda, and salt and mix well
Add the dry ingredients to the wet ingredients and mix well until no lumps
Fold in the bananas until mixed well
Stir in the walnuts
Pour batter into a 5x9 loaf pan or muffins (yields 12 muffins)
Bake for 30-40 minutes or until lightly brown
